Was it crashed and parted out or just parted out and left to sit 10 years ago? If the current owner had the car in a complete state when he bought it why are only these parts missing, unless he bough it as a parts car. I've been obsessed with these third gens for a few years and I can actually sort of afford this as a project.

Go out and find some car friends. Finish school and get a decent job to buy a nice-is townhouse with a garage. Have a dependable daily and a fun car, this lets you have the fun car be in the garage undriveable for days weeks or months at a time depending on how insane you are.
Cars are an expensive hobby. Likewise having tools, a garage, a DD and other conveniences to facilitate this hobby are also costly endeavours. I've never understood how people in their early twenties and under tote around with cars that they have supposedly worked on based on only the sum of their own resources. My guess is people like that have parents with lots of money. The rest of us have to get financially established before we start actualizing our hobby. My suggestion is to start by moving the fuck out to a place that will accommodate your hobby. Next up is to get yourself an inexpensive DD. The rest is just tool and part accumulation.

Is it normal for parts on G6's to constantly break
Bought a 2006 almost exactly one year ago. In that time I've had to replace 2 wheel bearings, get my brakes completely redone, the fans that blow the ac and heat replaced, a few other small things I can't quite remember and my a/c JUST broke completely.
I'm beyond mad at how much money I've had to throw into it already. Are they usually this unreliable?

Headunits have a surprisingly huge influence on the quality of car audio.
I used to have a Sony headunit and while the quality was much better than stock, it lacked depth and the bass was very hard and stiff. I got a used Pioneer headunit for free and the jump in quality was mesmerizing. Bass is now soft and succulent and you don't need to turn the volume all the way up to be able to enjoy every sound. Listening to MW2 soundtrack makes me feel like I'm in cinema, even on stock speakers.
My parents bought a Pioneer headunit for our Golf which was around 2004 and it served until last year in our Golf, then Audi 80 and then Twingo and I'm sticking with buying Pioneer forever. I myself would recommend starting any upgrades with a new headunit and then if you require even better quality, replacing the speakers or getting a subwoofer.
The bottleneck in my E36 are the stock speakers. I'm considering getting either Blaupunkt or Hertz speakers eventually.
If you use the stock headunit with a cassette aux adapter or an FM transmitter you need to kill yourself.
I'm looking for a dash cam.
Don't have a lot of money to spend. Am looking for something that requires as little maintenance as possible. Preferably something that turns on and off by itself if possible. And records the last let's say six hours, deleting older footage automatically. I live in Florida and between the old people, gang members and first-time bikers, driving will be the death of me.

Picture of lady that backed up on a busy road in order to get to a parking spot she just passed up. She reversed into a car that was stopped on the roadway behind her. She and her husband were going to make the guy in back guilty of hitting her by LYING. There's no audio here, but she was accusing the driver (with the dash cam) of rear ending her. She was lying and using RIGHTEOUS FURY to make her point. So people, even wealthy ones, bold face lie about car accidents and make it the victim's fault. However, he had it recorded on a dash cam and thus wasn't charged with rear ending her.
It's a good thing the husband didn't rush over to yank his dash cam and remove the evidence. That data was worth money. You have to protect your dash cam footage too. There are cases where people get confronted about handing over their data or else.
