I think your gf needs to focus on diet first before worrying about the gym. Seriously, at her size, a healthy diet at a safe caloric deficit combined with taking 30min walks every day will shed weight pretty quickly at first. Then when she's in a safer range of weight, still eating right, that's when you incorporate the gym.
Its best for you to start watching your diet too. Do it together. Use MyFitnessPal app or something. I find working out right before work or directly after is best when you're working 40+ hour work weeks.

Your second question is for you, not us. Your first question is the wrong line of thinking. You need to get her on a healthier diet to lose weight first. If you love together, start exercising at home with light cardio and bodyweight calisthenics. Nothing hard on the joints or she won't be exercising for long.
Try some 10 minute YouTube workouts and do them on weekdays, and be really positive and encouraging, not pushy.
Diet is the most important thing, though.
What is the fastest way to get that muscle definition there?
I can go ham on the stairmaster and hiking uphill if it matters. Also I already have skinny legs but just no muscle anywhere.

It's old meat that has been sliced down into sheets and repackaged for the poor.

You can't see the cuts through the front of the packaging, but they're old and you can tell.

If you're doing it with the deadlift in mind you're doing it wrong.
On my leg days I superset hack squats and stiff legged deadlifts. My regular working squat is 395 and I hack squat 315 for 8 and SLDL 155 for 12.
