At the golf course I work at, we make our own beef jerky, and we use top round. What cut do you think works best for jerky?

Not OP but for jerky you wanted the leanest cuts, thus top round. So anything super lean works, don't want fat in your jerky.

I give it five days, tops. I try to use it within two if I buy it fresh. I would never throw chicken away just because it was the third day, provided it smelled and looked okay, of course (and it's never gone bad imo. although there's been times when I've forgotten it for about a three and a half weeks in the back of the fridge. didn't try to eat that one).

I'm craving egg salad so I have some eggs on the stove boiling up right now. The last time I made egg salad I made too much and had leftovers, which unfortunately became all wet and runny a couple days later. Is there anything to be done about this? Also give me ideas of what inclusions I should add, I'm thinking capers or diced softened celery

Stir in an egg yolk next time. The lecithin contained therein is a natural emulsifier which will prevent the salad from breaking while it sits.

I like making them spicy using chili sesame oil and thai green or red curry powder.
But occasionally I'll go the classic plain salted route OR the sweet route with brown sugar, cinnamon, a bit of salt, and pumpkin pie spices.
