East Indian food is what you end up with when your climate is very hot and you don't have refrigeration. They perfume the shit out of things that rot. It's good food, but it's the reason it tastes the way it does.

You adjust the pH to keep the food from killing you, and you adjust the flavour so it keeps like tasting like you're eating a corpse.

I don't know why but I'm so so sick of "dry" food. If it's not swimming in a thick sauce of some kind I'm not intersted

Indian food is a godsend

The best food is everything in rotation to keep it fresh and exciting
