I'm craving egg salad so I have some eggs on the stove boiling up right now. The last time I made egg salad I made too much and had leftovers, which unfortunately became all wet and runny a couple days later. Is there anything to be done about this? Also give me ideas of what inclusions I should add, I'm thinking capers or diced softened celery

Stir in an egg yolk next time. The lecithin contained therein is a natural emulsifier which will prevent the salad from breaking while it sits.
