I have two decent sized pieces of steak fat. Had some left over steak and decided to cut the fat off of them for a different recipe. Can I do something with these? Or is the trash the best option? Pic Related

So when I was younger my parents had this one bottle of kikkoman extra mature soy sauce, they had it since before I was born till when I was 15.

And it was the greatest tasting soy sauce I have every experienced, it kept developing and the saltyness reduced greatly and it just tasted so much richer than the stuff I find now.

So where can I get soy sauce that tastes like its older than me for cheap?

I'm afraid you won't find real aged soy sauce for cheap. Storing the sauce for a decade in a barrel is a substantial investment and increases the price substantially.
