Why would that be surprising? Generic BBQ sauce is sugar, vinegar, and tomato. The gummies have the sugar and they added the vinegar and tomato. Of course it would work.

Sous vide is great. I just don't see why people feel the need to buy crazy expensive appliances to do it when there are so many cheap and easy DIY options for it.

I like cooking steak the old fashioned way--i kind of like the gradient personally.

IMO the best application for sous vide are: lean cuts that easily dry out (pork tenderloin/elk/chicken breast) > tough cuts over 48 hours to tenderize (short rib) > tough cuts to replicate braise (pork shoulder/brisket) > eggs > steaks > vegetables.

If you stick to the higher value protein and avoid the starch, chinese every time.

Chinese is quick cooked, so needs to be better quality like king prawn and better chicken and beef cuts.

Indian curries are traditionally stewed for hours to make cheap cuts palatable.

Looking for honest advice from anyone who works in culinary arts. I just turned 23 and up to this point, have had little direction in life. I have dropped out of university twice, and am in a bit of a lull right now. I however, love to cook. It would be awesome to become a chef, but being that I am already 23 and have never been to culinary school, nor have ever worked in a professional kitchen, I feel as if it may be too late for me. Can any of you guys give advice? Is culinary school necessary and what is it like? What is working in a professional kitchen like? Could it be worth it? Or am I just kidding myself.
