You apparently already know what you're doing. You'll heat to a low simmer, skim, and let go for at least 4 hours. Longer is better. Pressure cooker can reduce time but with comenserate loss in gelatinous.

I'm considering doing a round 2 tomorrow after the fat has congealed at the top in the fridge. Then I was going to add a Chuck or Eye of Round roast to it for maybe another 6 hour simmer. Then I'll be done. Thoughts?

i just made a steal in the grocery store. theres is this thing that if you buy 30% discounted products after 9 you get 60% off. so i bought 2 kg (4.4 pounds) of ground beef for under 5 eurobucks. been thinken about burgers for awhile.
whats the best seasoning for the patty? what spices? does it need egg? do i fry onions and jalopenos with the patty? more expensive cheese or just the regular cheddar slice ones? good recipe for buns or just buy fresh bread?

I just use a little salt and pepper, I'm fairly old school.
I would use egg yolk as a binding agent, not so sure about the white. I'd put the onions in with the patty mix. I sometime make fresh buns for my burgers, but they're so good, they sometime distract me from the patty itself, so I just get store bought ones about half the time.
i remeber watching somewhere that freezing the patty before frying was very used trick.
I like to mix in some Worcestershire during the formation of the burgers, along with salt and pepper. Then I like to put more Worcestershire on top if im grilling it, if pan frying than no. The Worcestershire will smoke up on the grill, creating a fantastic aroma.
As for buns, kaiser are the best bang for your buck, pretzel are a treat, and brioche are pretty good every once in a while, they add a nice sweetness to the burger. A good bun really makes for a good burger though. I like to put on sliced mild cheddar, the kind you get in a brick.
Toasting the buns is usually pretty good, adds some crunch to the burger. If you're pan frying, pour off the juices (once you've cooked the burgers) and then put the pan back on the stove top, and put the buns into the pan. let the burgers sit too, as they'll retain more juices if the meat can rest.

I'm not vegan, just allergic to dairy, but just for the sake of people who either won't eat animal products, or people who can't eat dairy, I had to post this.
This is the best non-dairy butter I've ever had. It tastes amazing, it's rich and creamy, just like real butter. I'm so fucking happy I found it. I hadn't heard of this brand before, but I found this at Trader Joe's, but apparently they also make non-dairy cheeses, and I'm thinking of trying them, since every other fucking non-dairy "cheese" I've tried has been pig disgusting.

I personally think that, since humans can subsist without meat, meat production--particularly industrialized meat production--causes unnecessary suffering on the part of the animal, and is generally bad for the long term health of the environment. I'm not a strict vegetarian or vegan by any means, but I try and avoid eating meat whenever possible for those reasons.
