Any kind of starchy vegetable works like eggplant, zucchini, squash, carrot, etc.

I always use zucchini, zoodles are amazing, idk I think they taste better than spaghetti but they won't give you that warmed up belly feeling.

I got an Inspiralizer for Christmas. I fucking love it. There was a learning curve to it, but it's awesome. The first vegetable "noodles" I made were sweet potato noodles that I used as a base for sauteed spinach, onions, garlic, and chicken. It was delicious and even my family members liked it (which is saying something, because they're always weird about new food preps).
I just bought some zucchini and yellow squash to make some "noodles" either tomorrow or the next day to go with some homemade pasta sauce I need to use up. I try to remember to post it.
I also want to get some daikon radish, cucumber, and carrot to make a viet/thai style salad.

you dont cook zoodles at all theyre better eaten raw
less soggy and you get more noodles cuz they condense down when cooked

use a real zoodler the hand held is harder
and it takes a bit of practice but once you get good at it , it becomes second nature
