If you're cutting just get like 150-200g protein a day and you'll be fine on the catabolism front.

I feel like I might need more volume for quads on day B and more volume for glutes/hamstrings on D.
Or would the 531 progression suffice for strength/size gains?

Tuesday- Incline treadmill when it's shitty weather, otherwise I'll go for a 3 mile walk.
Wednesday- 25 pushups, ab roller, more walking
Thursday- 30mins to an hour of swimming depending on my schedule
Friday- Yoga/stretching, more walking
When it's nice out on the weekends I'll go hiking, anywhere from 3-10 miles.
