No gas line unfortunately. I do have a good portable gas burner I use for my wok and other tasks where an element doesn't really cut it, but counter space will be tight.

It will be cramped either way, but I think it will be worth it. At the least there's just not enough counter space . . . if I have a cutting board, food processor, and cooling rack out I'll be using every last bit.

Chinese restaurants deep fry spices and aromats to makes batches of cooking oil, Edna Lewis' fried chicken recipe uses country ham and butter fried in lard, supposedly the best carnitas places benefit from using a rolling vat of lard.
McDonalds has mastered this art. That's why their fries are so good. Although I don't really know if you can call it seasoned when all they do is not change their oil for months.

In the fridge <5 days, I don't have a lot of leftovers tho I'm pretty good at cooking for one.
I usually toss stuff at a week old. Some things will last a little longer. Other things like freshly made pico de gallo are only good for a few days.
Until it starts getting moldy or smelly.
