I carry this Beretta 92FS Compact.

It's a good gun. Never failed in thousands of rounds. Sometimes printing is an issue, but only in the summer with tighter shirts.

The best idea for a BOB is to tailor it to what you want out of it. For example if you want to prepare for a car break down in which you go on foot, then the bag would be different from a winter car kit designed to keep you alive in the car as emergency services cleared the snow.

What caliber should I go for? The local pawn shops and Fuddstores want a fortune for old, beat up shitass rifles, so new is my only option.
With good shot placement, a good .223 hollow/ soft point is all you need. I like Nosler ballistic tips, they seem to work better than Hornaday's in my experience.
I prefer something a bit heavier, myself, but as long as you can place a shot behind the front shoulder and through (hopefully) both lungs, you should be ok.

.243 win is a minimum really to be certain, but .308 is good all around hunting caliber, your cartridge choice is up to you. .308 winchester is okay, .30-06 is better as it can toss heavier projectiles. The winmags are overkill for deer.

In a common caliber pistol? Weak ammo. Shot placement > penetration > energy, and the ballistic difference between defensive loads and ball ammo is surprisingly negligible most of the time.
Rifles? Stronk ammo. No one wants icepick cavities again.

The issue is escalation of force. You don't know if your assailant is capable of meeting you with equal or greater force. Then there's the issue of state laws. If your assailant is not using force that can be reasonably seen as deadly force and a knife is considered a deadly weapon then you could be on the wrong side of the law.
I would see use of a knife as a weapon of last resort and only then if you can catch your assailant off guard.
