Always consider an SSD. Try buying a large SSD for what you'd pay for your SSD+HDD combined, and add a HDD later
NVMe SSDs aren't for a faster OS boot, they're for productivity/scratch disk/VMs. NVMe and M.2 are not the same thing, M.2 is a form factor.
The Ryzen lineup comes with surprisingly good stock coolers. consider using them over any <$30 cooler.

If you took debian sources and compiled the debian kernel like you do gentoo's, installed portage, and uninstalled dpkg/apt. Is it still debian or is it gentoo now? get the S8 OP, it's a bliss and bluetooth 5.0 in the snapdragon 835 is simply fantastic if you rely on lots of bluetooth connections

if your machine supports libreboot (big if) then the only downside to using it over coreboot is that it might be an older version and might require some manual work arounds

otherwise libreboot is literally just coreboot deblobbed with some independent fixes but mostly focuses on making the install process painless
