Im working on a WiFi connected relay board for floodlights, that can have schedule uploaded and stored on the flash chip.
I also have a bunch or PIR motion sensors, reed switches, temperature sensor and soil moisture probes that i have no idea what to do with... ideas?

Playing with my PIR sensor i find there can be up to 1 second delay before it triggers, and sometimes not, it seems random.

Always consider an SSD. Try buying a large SSD for what you'd pay for your SSD+HDD combined, and add a HDD later
NVMe SSDs aren't for a faster OS boot, they're for productivity/scratch disk/VMs. NVMe and M.2 are not the same thing, M.2 is a form factor.
The Ryzen lineup comes with surprisingly good stock coolers. consider using them over any <$30 cooler.
Buying used is perfectly fine for budgets (PSU excluded)

Why is MediaTek such a terrible company?
1. They regularly fuck over their customers (you want those smartphone SoC we promised we would deliver now? you need to wait 6 more months, and no, we are not going to give you partial refund for breaking the contract).
2. They never release the modifications to GPL software they're using.
3. They go out of way to make it impossible for tinkerers to make custom ROMs.
4. They cut off kernel updates to customers prematurely so they can't support smartphones with MediaTek SoC for longer than 24 months even if the manufacturers wanted to.
MediaTek is now rapidly losing market share because of all this, yet they won't correct any of this shit.
