250ml red wine
750ml water
100g brown sugar
100g sea salt
3 Bay leaves
10 Peppercorns.
1 hour brine

My standard for chicken is 1 gallon non-chlorinated water, 1.5 cups kosher salt, 1 cup brown sugar, solids completely dissolved. I also add several cloves of crushed garlic. From there, it's up to you. Any spices that you'd like to try.

Whole chicken soak for 12-24 hours. Pieces for 4-6 hours. Brine should be refrigerator temp when you immerse chicken and keep in refrigerator while brining.
