I think they're going to be great, for the reasons you laid out. So many people have no interest in driving, yet don't/can't take public transportation, this is the next best option for them. And despite a few notable fuck ups, self-driving cars are by and far safer and less prone to accidents than people.

I'm almost 100% set on buying a S550 Ecoboost Mustang. My parents know this, they are also okay with it. I have yet to drive an EB, but one of my friends have the current V6 so i felt the car, and i like it.
The issue is, I always loved yuro cars, coming from yurop I guess. While I'd be more than fine with the EB I'm sure some part of me will always say "coulda bought E92 335i instead" (which is one of my dream cars). Is there a way to solve this?

There's a 2001 Bullit edition 2001 'stang for sale nearby with 80k miles for 9k, plan on offering 8k for it.

The V8 engines are shit at making power without forced induction.
The car can't handle to save its life since it still uses the Fox platform introduced on the Mustang in 1979.
The V6s are gutless and have virtually no support.
The only thing going for the car are its looks.
My suggestion: get a 98-02 GM F-body instead. A Camaro or Firebird, V6 or V8, is faster, has better aftermarket, can actually handle, and excluding the V6, can actually make power without resorting to forced induction.
If you're dead-set on a New Edge V8 though, get it. And use it as a DD until you can save up enough for a Coyote swap.

I was considering FI for it.
I'm not really looking for "fast as your money can go" otherwise I'd be financing something like a late model GTO that makes 400 to the crank. Really lame but I grew up in the early 90's and the New Edge stang was the first new "sports car" that I saw as a kid and fell in love with.
It won't be my DD (I have a jap shitbox for that specific reason & I deliver pizzas, so it would be better to keep it to save gas & wear and tear)
But I'm not really looking to run with 1320 (or really anybody) with it.
More of a backroads by myself or with a copilot & a stopwatch kinda guy.

Own a 2003 GT. I enjoy it as a DD. Enough power to be fun, but if you want serious gains your looking at going the FI route. The handling leaves a bit to be desired but you can make it passable with a few suspension upgrades. I have mine beefed up a bit (Subframe Connectors, better springs/shocks, strut tower brace, etc.) and it made a world of difference from my last mustang. I'll never hang with a miata in the twistys but I'm getting a bike for that reason.
Maintenance wise, they aren't hard to wrench on. Until your heater core goes out and you have to drop the entire dash out to get to it.
I will say you can absolutely beat the shit out of that engine without to much trouble. The aftermarket is plentiful and the sound with almost any type of aftermarket exhaust is glorious. I recommend Bassani as they have my personal favorite sound.
