Hey guys, I started dating a chef recently and now realize that I never knew anything about food ever and I'm ashamed for ever thinking so.
I thought I knew good food before he came along but it turns out I have a peasants pallet and have been naive all this time.
Of course I'm learning little things here and there when I watch him cook, but I'd like to learn some new tips and tricks on my own when we're not together.

Does anyone out there have any culinary tips, meal idea's, links, etc for me? I want to cook for him with confidence some day.

Oh, and baking. He's not great at baking but he likes sweets so I'd like to try my hand in perfecting that, too. I just don't know where to start.

As a chef who just started dating someone who knows nothing about cooking and wants to learn, just ask him. If he's actually a chef and not just some dude who works in a steak house, he loves it, and if you're interested in it enough to actually learn about it and do it with him, that's better than stressing out about it and trying to learn it quickly.

Cooking isn't something that you can just learn in a few months by reading books. You need to learn a few basic things, and then just get crazy and experiment and try new things. He'll know where to start, so just listen and learn from him, then think about what you like, and just go for it. It's mostly a trial and error kind of thing, once you know techniques and flavor profiles, you can do literally anything you want. It's why they say cooking is an art.

If you ARE looking to learn something without him, then focus on baking. It's more of a science. If you can read a recipe and follow instructions, there's really no way to go wrong. Anything you make is going to be delicious.

And as far as impressing him, if he's a chef, the only way you'll impress him is by showing initiative and actually WANTING to learn. He's probably had a better version of whatever you're going to make for him, but the fact that you're trying and he gets a homemade meal that he didn't have to make himself is going to be the best thing that happens to him all week.

Oh, Chef! Your post was so sweet it almost gave me a cavity. Thank you, I really needed that. He's really great and does say a lot of nice and encouraging things to me on this subject, but I always over think things and forget that he probably does appreciate the little things. He makes me feel so lucky when he cooks for me. I hope I can make him feel the same way.

He's a chef at a nice upscale restaurant in our area, and he's really passionate about food and his work. I've heard him say he considers himself an artist before, and I can absolutely gauge why. He teaches me things here and there when he cooks for me (I'm always watching him close by) but I'd like to brush up on some ideas and tips on my own that yeah, maybe I can impress him with later. For example, I tried making an omelette the other day for us and not only was it not fluffy the way I wanted but I think it was too salty. He said he was great but of course I'm sure he was just being nice lol.

As for baking, I actually am trying to dabble in it.. It's not going so well but I'm not too worried about it, I think that through trial and error I'll get it, just like with cooking.

Do you have any simple tips or tricks you could share that I can take with me next time I go to his house? I'm going to see him Thursday and I was thinking about giving him a break from cooking and making something for us, but as usual I'm nervous and feel shy.

I'm doing a PSMF for the next month. This means eating whites but not yolks. I have no problem with yolks normally so I want to save them to eat after the month finishes. What's the best way to go about this? Freezing? Some yolk heavy recipe?

Do girls even do psmf? The point is to spare muscle. I feel like girls would be happy to lose muscle too because it's more weight. I am trying to shred fast but it's kind of silly because it's winter and I'll probably look the exact same in clothes afterwards.

I'm having trouble with my crust when I bake a homemade pizza on aluminum. It tends to get soggy, particularly after I leave it on the pan to cool/serve. I know a baking stone's better but I don't have access to one right now. Is there any way to keep this from happening? I thought of cooking it longer or at a higher temperature but I don't wanna burn the cheese.

After the pizza is cooked place it on a wire rack or other VENTILATED surface.

The reason why the crust gets soggy is because if you place it on a solid surface that traps the steam coming off the pizza which makes it wet.

Most frozen pizzas recommend to just put it on the oven rack itself without a pan. Put foil underneath to catch any drippings. Works well for me.

Part of it is to create artificial rarity and drive up interest/prices.

But most brewers really do have limited capacity. I used to live next to a brewery manager, and he would talk about how he had to decide months in advance which of the fermentation vats (of which there were only a half-dozen) would be brewing which beers and for which periods of time.

There usually isn't a "spare tank" unless one has been taken offline for servicing/cleaning. They are usually always in production mode, and production is usually based on what they expect to sell.

If you take a big bet on a limited-run flavor and it tanks, you've just wasted a lot of your production capacity. That's why a lot of bigger runs begin as limited runs, and if interest is high, they get "promoted."

For me, servers adding ice to everything automatically makes me think they barely know how to order a pizza and will add ice to my beer.

The best part of the service industry is that I know at least one cook in the kitchen or one server will be able to get me cocaine. I mean it pays to be loyal as I've had many drinks & meals bought for me.

I literally took a $7.25 hour job on campus to avoid obnoxious experiences at restaurants.

My GPA shot up and now I'm happy. Got an internship making $25/hour and now I'm happy. I couldn't imagine working in a restaurant ever again. I pity service industry.

Since I was a little kid and probably before I was born, for New Years my Mom always made some pumpernickel break, sliced it up, put corned beef on top then swiss cheese and sauerkraut and baked it until warm and melted. We always made like 10 slices and every one had some. I still do it today because it's so simple and tastes good. For breakfast New Years day, potato pancakes with apple compote.

Help /ck/
Ive worked for years in a 4.5 star place so I know my way around a kitchen and have no problem cooking and cleaning for myself. However, i recently moved into a large house with a few other people who dont know their ass from their elbow when it comes to cooking. Ive basically banned them from the kitchen but I am in charge of preparing the houses food. Since this is a fridge shared between four people, this quickly spirals out of control.

Are there any products I could use to ease this problem? Some sort of containers i could leave with meals in the fridge that were durable and idiot proof? Im thinking about ways to freeze and store things for long periods too while having to mitgate freezer space with their shitty snacks.
