Well said, Kenji is a cuck extraordinaire in his writing but he is a damn good home cook/enthusiast.

Most of it isn't even relevant if you aren't an american.

My girlfriend got this for me a while ago and it's full of shit, probably the worst cookbook I've ever read and that's saying a lot because she got me a Portlandia cookbook at the same time.

It's full of bad advice that will legitimately make you a worse cook.

Well explained and broadly comprehensive look at different methods of cooking. Some stuff is a little basic but overall quite useful for the aspiring home chef. Good gift
