In my opinion, waffles have a higher ceiling, but also a lower floor.
Pancakes are gonna be pancakes, with the bad ones just being flavourless, but having the same texture as good ones.
Good waffles and bad waffles are very different, with bad ones being flavourless and soggy, and good ones being flavourful with a crisp outside, and fluffy inside.
I prefer a good waffle, but if I believe the waffles won't be good, I'll get pancakes.
Rate my toppings. All the lonely Christmas 'za made me jealous so I managed to get rid of the family long enough to make and eat two thin crust pizzas. Left is half pineapple, Canadian bacon quarters, red pepper half slivered Canadian bacon with onion. Right is diced onion, peppers and sausage with basil and chopped garlic.

I have a left over ham bone from christmas. Want to make a soup.
I've seen a few methods, I want to know what's best for extracting all that ham flavor.
I want to start on the broth. I was thinking low and slow for several hours.
So, what herbs and vegetables should I add in with the ham when I make the broth?
My goal is to make some sort of ham and white bean soup with carrots and potatoes.

Keep it simple, stupid.
Little bit of garlic, salt if you need, pepper, bay leaf.
Soak the beans overnight.
Slow cook it with just carrots.
Usually go for two or three carrots.
At the last moment wilt some spinach leaves into the soup.

Put bone in water. Put on heat. Simmer (not full boil) for several hours.

Looks like the Midwest may be finally trying to make good cheese. On my last trip there I did see some stuff from Indiana and Minnesota that looked interesting, so perhaps there's something to this NY Times mention (I haven't personally ever seen this "Jacobs and Brichford" stuff). The locals must think it's crazy, it's like: look at all that weird mold and strong smell, YUCKEEEE!

Yeah but can you imagine how great it would be if the vast agricultural capacity of flyover land could be harnessed to create good quality food instead of just massive quantities of junk (most of which ends up in landfills anyway)? It could lower prices on the good stuff. More people could be taught what quality food tastes like. It would be possible for flyovers themselves to eat well without being seen as "pretentious".
I for one am excited about the possibilities here. We could be seeing the start of an American food renaissance.
