I had no idea that the 4th gen Hyundai Sonata actually had a decent engine under the hood. They're packing a Sirius 4G64. ive heard that they can be very simple to repair and built for decent power.

Who cares? It doesn't have a suspension that's set up for hard driving nor any steering feel. Back during the '90s it was worthwhile drag racing normal cars because you could still be competitive against cars in the same price range, but nowadays there are cheap ways to get way more power than you'll ever get out of these.
I agree though, it's a good engine. But that isn't enough.

I'm eyeing one locally for $3500. It's a 1988, non turbo version, manual transmission. Owner claims 60k original miles and routine maintenance with a clean title. Of course, there's no telling until I actually inspect it.
I've only owned one Japanese vehicle from the same era, a 1984 Toyota Landcruiser. It was probably the most solid and reliable vehicle I've ever owned, but it's hardly comparable to a 300ZX.

Possible, and pretty easy to do. As a base chassis, the suspension geometry is similar between the two, and the e36 platform is a lot lighter. The S52 can make 280-300whp NA, and you can swap in an S54 if you need more. The e46 has a big advantage if you’re keeping both cars close to stock. Once you heavily modify the cars they’re very similar
