Civil wars tended to be winner take all. Any of the dynastic struggles in say, the Ottoman, Roman, or your pick of Chinese empires.
You also have the Alexandrian conquest of Persia, and a bunch of the wars that the Russians had against the splinter states of those old Mongolian hordes in the 15th and 16th centuries. Probably more that I'm not aware of.

You can actually read the letters of Hernandez Cortez himself, which he wrote as he encountered the Aztecs. They have been preserved and translates into English.
Yup. The best is "HIstoria verdadera de la conquista de la nueva España" (The True History of the Conquest of New Spain) by Bernal Díaz del Castillo, who was just a common foot soldier who went with the three first expeditions to America, and that wrote everything he saw from beginnign to end of the war. It's a 1000+ page masterpiece. Reading it right now.
It's really cool to read how witty Cortés was, and everything they did to use morale tactics, making friends and enemies. It's really curious how complex most characters are.
Excpet for Pedro de Alvarado, most of them weren't evil, as the superior jewish race wants us to believe

My kids in high school, but doesn't know what history classes to take. Have things changed that much since i was a kid? Are AP's any good?
If they have any interest they are great. I loved them ~ 8 years ago, doubt they've changed much.
From your perspective you absolutely should encourage it. From all my APs I got 56 credits at a state school and graduated a year early without much effort. This is not a humble brag because at least 1/8 of my class did the same so its not hard. It saved me/my parents probably 10k all in.

If their goal in life is to be historian/teacher, then take some history class of their interest.
If they don't have a goal of being a history teacher, just native country history and general world history. Then put them in classes that would actually benefit their careers.
Time is valuable. If your child doesn't have an edge in highschool, they will lag behind in higher ed.
