If you live in a city it should be easy to find because cities of any decent size will have somewhere that sells these items.
If you live in the country it should be easy to find because you are in the country.
I've literally never been anywhere that I couldn't find these things if I wanted to. Of course moderate to large cities will have something and any small town will likely have a small butcher shop or at least a processing facility.

For next week I've got a recommendation for salad.
Spinach (or green of choice), dried cherries, feta, and a balsamic vinaigrette (store this on the side, if you've got a little sealable plastic cup).
I've been cutting back on sugar so I've cut out the cherries, but it's still delicious as fuck.
Also try some indian curries, or meatless chili. They taste even better after sitting a while, and reheat well (saag paneer, chana masala, 5 vegetable curry, etc).

Yes you will be absolutely fine. The "expiration date" is really just a "best before" date that the stores put on there to alleviate liability. You could probably eat the chicken even up to a week afterwards. Couple days is nothing to even worry about. As long as it was cooked through no worries.
