I loved him in Good Eats, unfortunately that was his peak. Good Eats Alton Brown is definitely food network spirit animal material.
He's really funny in Cutthroat Kitchen though.
Good eats is amazing, he gives great science and background to the food and explains the why. I have always loved that. Recently he's been more of a public figure of sorts, which is kinda sad because I don't really care about what he thinks politically, I just want him to challenge my way of thinking about food.

Why isn't mochi more popular in the U.S.? I can't find it in ANY candy shops. I can only find it at Cost Plus World Market and the selection is very limited (but pic related is my favorite).
I've literally been looking in every Asian section of every grocery store, and every candy shop in a desperate search for more mochi, for a month now. I don't want to have to pay ridiculous shipping fees for mochi but I may have to. If I do, it better be good mochi.
So what's your favorite mochi?
I'll also accept mochi recipes although I share a kitchen and it gets crowded so I really try to limit the cooking I do there.

It's pretty easy, and as for the mochi flour (and taro powder) nuts.com has decent shipping prices.
There are a lot of Asian grocers around me (Seattle area) so it's not difficult to get mochi here.
I like sesame/poppy seed and red bean mochi.
I'm in northern Nevada and it's practically nonexistent even for sushi restaurants and other authentic Asian places but I'd kill for that stuff. Quite a shame.

Okay /ck/, today we're making Flemish rabbit stewed in beer. First we marinate the rabbit (2 hind legs in this case), in pic related;
-2 white peppercorns
-2 black peppercorns
-2 large bay leaves
-teaspoon sea salt
-2.5 cups/660mL Belgian brown ale or dubbel
-3 tablespoons of red wine vinegar

Since I really don't like the ones on sale here, I chose to get Westmalle dubbel, which I do like, and sour it with red-wine vinegar. I got raspberry infused red wine vinegar, since I really like the tang of raspberry in rabbit dishes.
Let sit for two to six hours, while you go out and enjoy autumn. I'm going to go for a small hike while awaiting the Redskins - Bengals game. You can also prep veggies ahead, I'm using a pound of carrots, two large onions, four stalks of celery, and 3 cloves of garlic, but parsnips, potatoes, pumpkins, chestnuts, celeriac, cabbage, etc also work. You'll also need about a stick of butter, and I really prefer adding in some cubed smoked pork belly to enhance the flavour of the rabbit.
Well, it's marinating now, still a bit foamy, but that'll subdue in a while. I've been told adding a crushed juniper berry to the marinade makes the foam disappear quicker, something to do with the oils in the juniper, but I really fear the juniper will overpower the taste of the rabbit. If it were hare, squirrel or muskrat, the juniper would've been a no-brainer.
I'll be going for a walk to get an Irish coffee, autumn bock or quadrupel in town, but I'll be back in a few hours to continue the dish.
