Buddy of mine moved to some shit-sack town in East Texas where everything closed a few hours after dark. He opened up a small delivery-only Italian restaurant and hired a couple of students on weekend and nights to run food for him. Made a killing.

I moved in with my girlfriend about 4 months ago and she only has really bad knives.

For Christmas I want to buy her a decent knife to make her life cooking for us a lot easier.

What's a good knife to buy her on a budget?

I read that this Mercer is the best for the money, but I know nothing about these things. (https://www.amazon.com/Mercer-Cutlery-Genesis-Forged-Chefs/dp/B000OOQZMY)

Anything you guys could do to help me would me a HUGE help. Thanks you.

I'm an idiot, thanks.

Kansasfag, been in Arapho the past few days for hiking and camping. Staying at a hotel in Denver tonight, and before the dog and I leave (Hence why I need to-go, because I don't want to leave the dog in the truck alone for too long)

What are some of the best places? I'm in Glendale right now, but willing to make a trip if it's worth it. I'm not picky, but not really craving any chinese/japanese right now.

Sorry for the request, but I'd like to eat somewhere good before I head back to Kansas

As for the steak; you should put some garlic salt in your rub.

Has anyone here ever made candy? I was wanting to get into it and my kind-of-but-not boyfriend bought me a candy thermometer and a tin-lined, hammered copper pot for Christmas, pic very related.

Is a tin-lined copper pot ideal for candy making? I've read about needing to clean and treat the tin lining with milk and having to re-tin the pot etc. I'll be the first to admit I don't know anything about it but is this a good purchase? Does anyone have any experience or advice?

Also, general copper pot and/or candymaking thread.

Sugar burns are the worst burns. You need balls of steel to make candy and perfect execution not to fuck your shit up.

I've seen some horrifying injuries in candy shops.

So I was thinking about my favorite Italian food, Chef Boyardi's ravioli, and I noticed in the ingredients that they use cheddar cheese as an ingredient

I think this is what their secret is to get their sunday gravy so perfect, another thing I noticed is that the beef kind has beef in the gravy but the cheese ravioli doesn't have any beef in the gravy.....thoughts? Do you prefer it one way or the other?

You would have been better off just using "gravy" instead of "Sunday gravy." I'll give it a 3/10 just because there isn't that much Chef Boyardee-related shitposting.
>>
>>8385379
I understand the confusion but sunday gravy is Italian for tomato sauce

I ordered 'Spicy Salted Spare Ribs' from some random chinese place on GrubHub because they caught my eye. The turned out to be one of the best things I've ever eaten, but they're definitely not spare ribs.

The pieces of meat are all kinds of irregular shapes anywhere from 1 to 4 inches across and maybe 1/8 inch thick. About half of them have tiny bones similar to a pork chop but flat and thin, and there's a lot more meat to a bone than on a pork chop.

They're "cooked dry in a wok with special seasoning" according to the blurb on GrubHub. Seems like they're just sauteed with tons of diced garlic and jalapenos, then salt, pepper and chives are added. They're not very greasy but have a crispy almost fried texture to them.

Can anyone guess what cut of meat this is or tell me if this is a known recipe?
Pic looks kinda close but image is called 'pork chops' so I still don't know the cut.

How does /ck/ makes homemade pizza?
I had tried many times before, with mediocre results and only recently, my pizzas started turning out decent (pic related) after I read that you are supposed to turn the heat up to the maximum and preheat.
However I still have this problem, when I put too moist toppings, that the upper part of the dough becomes soggy and undercooked. What can I do to prevent this.
Also general homemade pizza advice.

Get a stone oven.
>>
>>8384801
You have to manage the moisture i.e. you shouldn't be putting too moist toppings on. If you're using pineapple or tomato or something be modest with it slice thinly and even consider drying with a paper towel before it goes on the pizza. Some moisture can be mitigated with dry cheese but don't rely on it.

Looks like your shitty cheese is dropping quite a bit of oil, too.
