Has anyone here ever made candy? I was wanting to get into it and my kind-of-but-not boyfriend bought me a candy thermometer and a tin-lined, hammered copper pot for Christmas, pic very related.
Is a tin-lined copper pot ideal for candy making? I've read about needing to clean and treat the tin lining with milk and having to re-tin the pot etc. I'll be the first to admit I don't know anything about it but is this a good purchase? Does anyone have any experience or advice?

So I was thinking about my favorite Italian food, Chef Boyardi's ravioli, and I noticed in the ingredients that they use cheddar cheese as an ingredient
I think this is what their secret is to get their sunday gravy so perfect, another thing I noticed is that the beef kind has beef in the gravy but the cheese ravioli doesn't have any beef in the gravy.....thoughts? Do you prefer it one way or the other?

I ordered 'Spicy Salted Spare Ribs' from some random chinese place on GrubHub because they caught my eye. The turned out to be one of the best things I've ever eaten, but they're definitely not spare ribs.
The pieces of meat are all kinds of irregular shapes anywhere from 1 to 4 inches across and maybe 1/8 inch thick. About half of them have tiny bones similar to a pork chop but flat and thin, and there's a lot more meat to a bone than on a pork chop.
They're "cooked dry in a wok with special seasoning" according to the blurb on GrubHub. Seems like they're just sauteed with tons of diced garlic and jalapenos, then salt, pepper and chives are added. They're not very greasy but have a crispy almost fried texture to them.
Can anyone guess what cut of meat this is or tell me if this is a known recipe?

I had tried many times before, with mediocre results and only recently, my pizzas started turning out decent (pic related) after I read that you are supposed to turn the heat up to the maximum and preheat.
However I still have this problem, when I put too moist toppings, that the upper part of the dough becomes soggy and undercooked. What can I do to prevent this.

You have to manage the moisture i.e. you shouldn't be putting too moist toppings on. If you're using pineapple or tomato or something be modest with it slice thinly and even consider drying with a paper towel before it goes on the pizza. Some moisture can be mitigated with dry cheese but don't rely on it.
