/biz/ is full of literal children who can't do anything more than mine shitcoins on their laptops, so I come to /ck/ hoping to get some general tips on what its like to own/manage a food business.

I have access to about 15k and thought about starting a food stand making something cheap and simple at my local farmers markets and maybe moving up to a kiosk and hopefully a small cafe someday.

I owned a food cart during my time at uni in the US back in the 00s (it's been seven years since it was 00s, wow).

Get your cleanliness certs (the name of the certification might vary depending where you are, I don't know, but where I went to uni, it was called Servsafe), plan your menu and have a go of it.
From my cart, I sold sandwiches made with my own homemade deli meats on my own homemade bread with my own homemade mayonnaise and mustards.

I sold, also, homemade cold drinks (iced coffee, iced tea and a type of lemonade) as well as plain water, sparkling mineral water and Italian sodas made with a variety of syrups, most of which were homemade.
The only things not homemade were the cheese, the ice, a handful of the syrups and the smoked salmon.

For two days each week, I made about $500 at an initial investment (for certs, licenses, spot reservation at the market and other costs) of about $2000. $500 per week × 13 weeks in the season - $2000 initial investment - $600 ingredients investment the whole summer = approximately $3900 which is over $18 per hour (6 hours at the market, from 11-5 each Saturday and Sunday plus an extra four hours of work each weekend to prep).

Not a bad deal back then. I'm sure now, with prices being as they are, you can earn considerably more per hour doing the same sorta thing.

Is there anyone else at your farmer's market already selling food?

If not then you have the option for "fair" type food. A small menu and decent ingredients made into something that is quick and easy to eat while standing/walking is what you want to aim form.

Think about what you want to make and your budget. Things that need refrigeration or have a hold temperature are going to take more capital and space. Plus space and transportation. Do you have a truck already?

Also the demographic and location your at is something to consider.

Have you looked into any permits needed for selling there, and if the county/township has any regulations on equipment you can have to cook or prepare foods?

Without knowing anything about you, or your passion for food, I'd recommend kettle corn. It's simple, low cost product, low cost initial investment on equipment, and it's easy to eat while on the go. Plus, who doesn't love getting kettle corn? You get a quick show and a nice snack.

Thanks for breaking down into numbers, thats about what I expected. Yeah I expect to get fully certified (its a requirement here).

>Is there anyone else at your farmer's market already selling food?
Yeah, but everyone usually picks a very specific type of food they are selling. What I am interested in selling hasn't popped up yet and is very low cost to me.

Permits are pretty easy, I just have to get more ducks in order before I go through the effort.

Robert Rodriguez breakfast tacos are really good. I make them all the time. He was telling the truth when he said you will crave them for the rest of your life. Cheap as fuck and one of the few meals I'd rather make at home than go out.

I can't shit and I'm desperate for relief.
I've never been constipated before until yesterday. I was on the toilet from 9pm-4am because I couldn't even stand. I've taken magnesium, polyethylene glycol 3350, tried diving in with gloves, saline enema, warm water enema and olive oil enema(with the saline burning like the fires of hell. PG could take a couple days from what I've read but I can't eat, its difficult to piss, can't sit or walk at this point. I really rather not have to go the hospital if not for the fact the ride there will be agony and I can't sit/stand waiting too long.

Get an enema, then. But this is more of a health issue than a cooking issue.

So after going outwith milk a few weeks maybe even months I decided to get milk and cookies. Problem is the milk I got from my local store tasted more like water than milk. Last dam time I get milk from Mc Arthur.

Any recommended milk brand that doesn't taste like water?

drink whole milk

chocolate whole milk is god-tier and actually kind of hard to find - not great with cookies, amazing on its own

Got into MRE videos through Gschultz but Steve's demeanor is just more comfy to watch.

Makes me want to try some.

No, it's a Filipino thing

Actual comic contents aside, I still can't understand how this works out in general in a non-fictional setting. Not just with fictional Olive Garden, but with cafes and shit in general.

Isn't the usual goal of any eatery to flip as many tables as possible? Wouldn't a person coming in to buy maybe one or two cups of coffee or tea and then spending the entire day at a table or booth to read a book or do work just hamper business? Customers who come later will find less seats available so then they might just leave if the time it takes to find a spot takes too long. I don't know if Olive Garden actually lets you spend a few hours drinking unlimited soup and breadsticks all day, but what about diners, cafes, and bars? I see plenty of media where people spend hours in similar locations and nobody thinks it's weird or bats an eye.

Do these places just run with the assumption that there will always be some number of tables taken up long-term by customers? Or do they just expect to never run out of seating? Or is there some sort of implicit time limit that people respect and leave by? I know somebody's going to say it depends on area / business but specifically here in the US (and maybe Europe), what are the usual guidelines for being a person who wants to spend a few hours at a coffee shop or something?

I spend most of my days indoors so I never go out to do this sort of thing which is why I'm asking. Sometimes, a change in scenery in nice but I still feel like if I try to spend more than like 10 minutes at a cafe, somebody's going to ask me to leave or complain I spend too much time with my table on a subsequent visit, especially if the places I might like to work in are more crowded.
I already have enough social anxiety as it is when business owners start recognising me and saying hi to me and shit that make me want to leave town because they know I'm here to order the fatty specials.
the 'tism is real

Basically in these situations it's all up to your server what kind of an experience you have and 9 times out of 10 your server decides that based entirely on your tip. Tip outrageously and you can do about whatever you want.
>>
>>8380795
>the 'tism is real
I was a latchkey kid, never went out unless it was a family dinner trip or something and we'd come straight back. Now that I'm living by myself, I feel like I'm missing out but I'm too much of a wuss to go out and do new things without worrying that I'm embarrassing myself.

>Tip outrageously and you can do about whatever you want.
I don't know what range of money you mean by "tip outrageously", and that goes back to my point of isn't it better for the server to just flip more tables instead of getting a one-time large tip for even an hour's worth of table time? And if I'm starting to spend like $10-$30 extra just to spend time in a booth for a day, I feel like the money could be spent on something else. Then there's the floor manager and other servers who'd probably notice that I'm hogging a table.

Also cafes and shit don't have servers since you order at the front and then take your drink to the table so I don't see how a large tip would translate to doing whatever I want.

How old are you? You've got to get over this or else your social phobia will only get worse over time and a detriment to your happiness.

Force yourself outside of your comfort zone. Strengthen your social skills like a muscle, throughout repetition and pushing yourself harder.
