I went and got pho for the first time in a long time the other day. But when I got my dish, next to my bowl of pho was a small salad consisting of probably 70% cilantro and the rest bean sprouts and jalapenos.
I was really unsure what to do since the cilantro was incredibly fragrant, and I usually saw bean sprouts in ramen that I'd had before at other places. So I ate the cilantro stems and bean sprouts raw and whole before putting the last bit in my pho broth (and eating them whole once they got a little flavoring).
Is what I did correct? Is it normal to receive a shit ton of cilantro with vietnamese dishes and eat it like a lettuce salad?

Every other Monday I clean the kitchen in the restaurant where I buss tables the rest of the week. I've been told by the manager that I'm free to cook and use what I want for myself. So I've been meaning to try making my own almond milk for a while now, and last week bought some almonds, and some hazelnuts. I put them in a bowl of water (as you're supposed to before blending and straining them to make the milk).
I then realised I'd forgotten to buy a cheese cloth. No worries, I'll get it tomorrow I thought.
It's a week later and I've only just got a cheesecloth. They've been sat in covered bowls of water in the fridge for a week.
Are they still ok to use? Or should I throw them out wearing gloves and clean out the fridge? They look ok but bacteria and that, I don't know mate.

There is always a risk. I would still use it though if the water doesn't smell or almond doesn't taste rancid. You could always pasteurize your the finish product to be safe.

GMO is a scary word to stupid people. I've seen people argue over what kind of WATER is healthiest to drink, so I honestly have no idea what to do at this point.

Soylent is advertised as a meal replacement.
A meal supplement that's designed to be your bring to work lunch doesn't have as many restrictions since you can eat varied at dinner.
Also an easy thing to do is to use fish oil instead of soy oil. It's not gonna be vegan but a lot of problems of soylent began when the made the change. Also you can still advertise as cruelty free since fish isn't captively raised.
A slurry of oat and manioc flour with fish oil and some carrot or banana paste is pretty close to covering all your diet. Whatever you do, get a career dieteticiant to work with you and have you factory stay clean even if that means driving the price up a little. People still bought soylent even if it's more expensve than reguar meals because they liked the novelty.
