It is okay to take a day off because rest days are important.
That cookie won't hurt because I'm still not on my max calories today, besides I haven't gained weight in weeks so I think I need to up my calories by 500 or so each day.

Have that exact model, was looking for an insole because i didn't like the foot support of my current boots. Using just the sole is pretty comfy and i leave them in all the time, the extra inserts start to get a bit silly and uncomfortable to walk in, might work better if you had a higher boot.
