Is using this as a marinade a meme?

Also, what's your opinion on marinades? I've seen some claims that they don't penetrate the meat enough to make a difference, and you end up pouring out perfectly good oil, vinegar, and spices. Seems like you're better off using it as a dip.

As much as it goes against my policy of cooking as much as possible from scratch and avoiding buying pre-made things, I must admit that it does make a pretty good marinade.

Marinades do work well, if you keep a few things in mind:
1) it takes time. Marinading for 20 minutes (for most applications, anyway) is useless. Leave it overnight. You can speed up the process by using a syringe as well. These are sold as "flavor injectors".

2) it takes the right chemistry. A marinade should include either an acid and/or alcohol, as well as a fat (oil). That way it carries both water-soluble and fat-soluble flavors. That bottled dressing contains both of those (vinegar for the acid, and oil for the fat). It should also contain salt, so it affects the moisture of the meat the same way that a brine does.

Whether you need a marinade or not is totally up to your preference. Most marinades add flavor, so just like any other source of flavor it's up to your preference if you like it not.

You can also tenderize meats with marinades including certain ingredients. Commercial mixes often contain a tenderizing agent added. You can also do that by including certain RAW fruits like papaya, kiwi, or pineapple. Those contain enzymes which break down meat. Canned or otherwise cooked versions of the fruits don't work though--heat deactivates the enzymes.

I discovered 5 whole heads of garlic in the back of my pantry and they are obviously old and about to go bad with a few cloves already sprouting.
What do i do with them? Ive already tossed a few into a pan with ground sirloin and made it into taco meat and into a pan with spanish rice. But Im at a loss as to what I do with 5 whole fucking heads of garlic rapidly deteriorating.
Im not gonna sit here and just make a whole fucking loaf of garlic bread or mince the entire batch and store it in a mason jar(I'm out of mason jars cuz of my tuna fishing trip last week, fucking 200lb yellowfin)

How do I save my goddamn garlic?
My goldfish memory will be the death of me.

As an aussie, it's pretty common for us to put egg on pizza, but it's only really good if you crack it on and cook the egg with the rest of the pizza. Adds great texture.

Do you cook without using recipes? Have you had any successes doing it? Any complete failures?

Pic semi related, I had a go at making a curry without using anything for guides. It turned out pretty good, better than a lot of things I've made following recipes to the letter. Adding dried apricots gave it a nice sweetness.

Good on you m8. Cooking w/o a recipe should be your goal, it's what makes it creative and fun. And yes, there will be utter failures, but as you develop your skills those will become less and less. I'm a competent -not great- home cook and I'll look at a recipe for a dish I'm unfamiliar with for an idea of what ingredients I need and to get a sense of what prep technique is required, but rarely follow it. Home cooking should relaxing, creative act of love IMHO. & ive got a bag of apricots, you've inspired me to do something with them. :^)

Hey guys, my mom's a pretty healthy eater but recently been to the doctor's and he said she has H. Pylori. Basically she's been given pills to kill the bacteria and a list of the things she can't eat, which has been a hefty ask. It pretty much rules out most things she likes along with some stuff she rarely touches (sugary, fried, fatty foods).

I've been searching online and have come up with a list for her but it all seems to fall a bit short and is contradictory. Being my go-to for any food related topics I was wondering if anyone else had this or could help me come up a list for her? Thanks a bunch in advance guys.

Prohibited foods:
Citric Fruit (along with pomegranate, her favorite, though it isn't that acidic so I'm not sure why he prohibited this?)
Berries
Yeast
Spicy Food (consequently rules out seasoning)
Oils (Olive oil, almond oil, coconut oil, all oils).
Processed, Sugary, Fried, Fatty etc. foods

Sometimes you don't have enough salad makings and you don't want to go grocery shopping right this instant.

Sometimes you're on the road or at work and need a quick meal that isn't too shitty for you.

I mean, shit... a burger, fried rice, or a simple pasta dish are usually much less effort than a salad, and people go out for those all the goddamn time.

I sometimes *walk* to a restaurant to get a salad, because salads taste good. I'll probably get one for lunch today, in fact. Probably the one with quinoa, farro, arugula, chicken, tomatoes, and various other stuff. I get that about once every week or two.

I don't eat flyover salads like the one in your picture, because I do not eat at MacDonalds.

I don't drive to a restaurant to order salad, or any restaurant to order anything, because assuming I owned a murderbox (which I haven't since 1998), it would take me about 4x as long to pick up the murderbox, drive it to the restaurant, realize the nearest place to park it was where I picked it up in the first place, drive it back, park it again, and then walk to the restaurant that I just drove past about 4x before realizing the error of my ways (note: this is logically inconsistent because if I was a cager I would be incapable of recognizing the error of my ways).

Needless to say that would be completely insane, but then, cagers are completely insane, which is why they lobby for subsidies to subsidize their ridiculous cager lifestyle. I recommend you burn your entire poorly thought out subdivision to the ground and rebuild sane mixed-use development where the sidewalks are something other than a buffer between the lawn mower and the vehicle traffic.
