main dish for a potluck?

so im having a medium sized birthday gathering at my house next weekend and its a potluck but i also want to serve a main dish. people usually end up bring chips, dip, desserts, or maybe a bottle of alcohol which is all great but i want to make or buy something for everyone. what is something that goes well with everything? i dont really want to do burgers or hot dogs but i do have a bbq so im open to suggestions. might be about 15-20 people and i dont have a super high budget

A big pot of chili, with a "bar" of toppings and extras for the chili, like sliced hot peppers, cheese, sour cream, salsas, hot sauce, tortilla chips, cornbread, saltines, minced green onions or white onions, dried chili flakes, etc. And, if you really want to use your grill, make roasted corn on the cob with lime pepper butter.

When watching chefs cook, most of the time when they deglaze the pan with alcohol (usually stronger alcohol but sometimes even wine) it briefly catches on fire, apparently without them doing anything else. It never happens to me when I cook, the alcohol just burns off without flaming.

Why is this and am I doing it wrong? Is flambeing better?

When you are watching chefs, they are putting on a show. Notice how they work the pan. When they add alcohol they will tilt the pan just enough to expose the alcohol to the flames.

Get yoself 220 grams (1/2lb) of minced chuck. Chuck is good because it's got a good fat content so the burger holds together a lot better, which means you don't need to use bread crumbs or any of that shit. Get to a butcher, they'll do it for you - ask for about 25% fat content.

Next you either want a brioche bun or ciabatta bun. Brioche if you're only having a few toppings, ciabatta if you're going nuts and piling a fuckton of stuff on.

So for toppings you get some cheese (American melts best, but sometimes i'll use some sharp cheddar depending on what else is going in the burger) fresh lettuce, tomato, bacon, caramelised onions (I find uncooked onion to be a little overpowering) and jalapenos. For sauce you can use ketchup and either mustard or BBQ, but I make this relish that has onions, ketchup, BBQ sauce, lime juice, cayenne and half a shot of tequila.

Much like a cheap whore,the great thing about burgers is that the limit is literally what you can put between the buns.

I like to grind my own meat, but I can't right now, because the board that I had my grinder bolted to cracked and I haven't replaced it yet. So, right now, I use a mix of three parts ground chuck to 1 part ground sirloin for flavor.
Other than that, I'm a pretty big fan of just a classic burger - green leaf lettuce, tomato, onion, pickles, mustard. I'll also shake a little hot sauce on it.
If I'm in the mood, (especially if I've made the pumpernickel buns), I'll make a mushroom swiss burger, with sautéed mushrooms and onions, Swiss cheese, grainy mustard, and a little horseradish, plus fresh spinach.

Whats your favorite fast food joint? I like all kinds but Checkers/Rallys is my favorite, always as a kid....I would order a spicy chicken sandwich, a chili cheeseburger, a medium fry, and a banana milk shake

What pancake do you want to make? I'll give you my American recipe if you like.

>Plain flour
>Buttermilk (if you can't get buttermilk,squeeze about a teaspoon of lemon into normal milk,stir and let sit for 10 minutes)
>pinch of salt
>two tablespoons of melted butter
>egg (2 eggs if making a big batch)
>2 teaspoons of sugar
>tsp of baking powder and tsp of baking soda

For fluffier pancakes,mix the egg and flour together just a small bit before adding milk. Use butter in pan.

There are many different ways to make pancakes,they were also my start into cooking and I still make them every Saturday morning. Hope you enjoy,Anon!
