When watching chefs cook, most of the time when they deglaze the pan with alcohol (usually stronger alcohol but sometimes even wine) it briefly catches on fire, apparently without them doing anything else. It never happens to me when I cook, the alcohol just burns off without flaming.
Why is this and am I doing it wrong? Is flambeing better?

they're probably cooking with gas at a higher temp and hot hot pan. if it taste fine don't worry about it.

When you are watching chefs, they are putting on a show. Notice how they work the pan. When they add alcohol they will tilt the pan just enough to expose the alcohol to the flames.

is it possible for the alcohol to catch fire without lighting it, just from the heat in the pan?
