Ok, what the heck are these things?

I work in a law office, and every time this Asian man comes in the office he drops some of these off. It's basically stewed, peppered beef inside a flaky pastry. I opened one as an example. But the secretary never asks what these are so does anyone know? All I know is that they're fucking delicious.

It's a niu rou bing, aka beef pancake. It's a streetfood in china. Each region will have some form of it, maybe with a different name. I don't know which region the ones in your pic is from. The ones in northeastern china are also flaky and I know they make it by brushing on a roux.

Can we have a general tips thread? Small things to give better results while cooking and your own personal flourishes.
I just wanted to ask what to add to a chili to add flavour when it's already spicy, so might as well make it a thread for things like that.

Are there enough female chefs in our restaurants? It seems like every high end restaurant is staffed by men and it would be nice to see some women chefs represented in our kitchens. Traditionally, women are expected to cook, so why aren't there more female chefs?

I feel like more places could stand to add a little diversity to their kitchens. I don't need to see another old white guy yelling about food.

I've worked in restaurants for years. Angry yelling male chefs are easier to deal with than bitchy female chefs.

Satisfied, sure.
Thats a pretty subjective thing though.

The food should be of acceptable to excellent quality no matter where you go.

High end places are something I view like concert tickets, its more for the experience vs. a lasting effect.

I'm a trim guy who used to be a fatass. Now that I'm trim I realize my portion size is about 60% of what I used to consider a normal portion size. So, my hungry friend I'd advise this: look at who the patrons are. Are the trim or are they fatties. If big portions are a priority for you choose a restaurant full of fatties. Just don't complain when a place full of trim people serves more reasonable portion sizes. Those places aren't for you.

How long do pickled goods last?
If I open the jar and leave it in the fridge will the contents spoil quickly? How do I even recognise that pickled food isn't good anymore?

Itll last a long fucking time. If it does somehow go bad it will prolly smell funny.

Why not look up a recipe that has instructions? Throw some cooked beans into a casserole dish with some molasses and spices then cook for a bazillion hours

op here, I've made this meal a few times, first time i just did some salt pepper olive oil and wrapped in foil
second time i did above + pesto.

i want new recipes for shit to make with my wok
I have hoisin sauce, chili oil, oyster sauce,sesame oil, fish sauce, rice vinegar, sweet chili sauce, black vinegar, dark and light soy sauce, red curry paste, honey and some sorth of fermented bean paste
as for meat i have pork, chicken, beef, shrimp and squid
also the regular shit spices, wine, garlic and ginger, eggs,noodles and rice

Hey OP, here's an easy recipe for lemongrass chicken if your looking for something different.

2 chicken breasts, cube to bite sized pieces
1/2 red onion, finely sliced
2 stalks lemongrass, the inner bulbs finely minced.
1-2 cloves of minced garlic
2 scallions, chopped
Shaoxing rice wine
Sauce: 2 tbsp fish sauce + 2 tbsp water + nice pinch of sugar

Sear the shit out of the chicken. You just need to brown the outsides as the chicken will stay in the wok and cook through, through the recipe. Reduce heat a little and add in onions, cook until translucent. Add lemongrass, and garlic, fry for like 30 seconds to not burn. Deglaze with shaoxing, reduce to medium heat, and add sauce + scallions. Cook until chicken is cooked through and sauce is more cohesive. Serve over write rice.

I've sometimes been unable to find lemongrass in the grocery store, and this recipe more or less works with a big knob of minced ginger. But it kind of defeats the purpose of "lemongrass chicken".
