Why the fuck can't I buy this shit in stores? I've tried like 10 copycat recipes and they're all bullshit and don't even come close. I don't want to go to the fucking mall every time I just want to enjoy a pretzel with this god tier sauce. This is bullshit.

I watched this documentary on Netflix, and it was very convincing.

We are all herbivores. The food industries, dairy industries and the pharmaceutical industries only care about the money and don't want the truth to be known. We get sick and stay sick and just pay for the meat, dairy and medicine until we are dead.

I'm getting a headstart on the weekend smoke because I had the day off. These ribs have been smoking for 2 hours with an overnight dry rub of salt, brown sugar, garlic powder, papriksa, ancho chili powder and some cumin. I had a pot of baked beans from scratch under it during the 2 hour smoke that I'll go into more detail in a sec.

Anybody smoking today or planning to this weekend?

These are the beans I had under the ribs during the smoke period. I basically used this recipe from serious eats with a few adjustments. I cut the brown sugar in half, used maple syrup in place of the honey and molasses, added a bouquet garni of thyme and sage during the parboiling step which I did in a pressure cooker for 30 minutes instead of the dutch oven, and substiruted home cured back bacon for the belly bacon. The recipe recommended 300F for 4 hours but the smoker is going at 225F so I'm moving them to the oven at 325F after the 2 hour smoke. I tasted them and they're fucking great just need to tenderize and reduce the liquid.

Smoked meat is goat for tacos. Really adds another dimension. I made lengua tacos a few weeks ago where I smoked the tongue (no pics, sorry) and they were the best I've made.

Scenario: friend was eating some leftover ground beef from some hamburgers we cooked earlier with tortilla chips and cheese. I commented on what he was eating and he said he was eating "tacos." I disagreed because there was no tortilla shell wrapping the contents so at best he was eating nachos. Well was he eating a taco or not?

Second argument that stemmed from the first: since I argued that the shell of something is vital for the dish to be considered what it is, another friend joined in and started to argue that the filling is more important than the outer shell of something for the name. Example being that the pie filling is more important than the pie crust to be considered a pie. I need a consensus and I hope I explained this well enough. I will be here for clarification if needed.

I just bought a load of meat at the supermarket, and I was thinking of trying different methods of preservation beyond freezing, as I have a small drawer freezer in my fridge. I'm thinking of making a Spanish Adobo, as they were originally used for one batch. Anyone have some great recipes? Most seem to be marinades.

Anyone have some other ways of preserving raw meat?

Sure. Dry it an make jerky/biltong
Cure it using salt and/or smoke (like bacon, ham, etc.)
Lacto-ferment it (that's how dry sausages like salami work)
Get a pressure canner and can it.

Girl coming over. Never looked in my life. I'm making my piece of resistance delectable frozen pizza with divine chopped up American cheese slices and chopped up pepperoni sticks ontop and dashed with Frank's red hot and for orderves garlic bread sans garlic yummy sliced white bread toasted and then buttered but to take it to another level I put American cheese slices on the bread and melt it in the microwave.
