Brown butter sage sauce with mushrooms. Pro tip: mushrooms freeze well and are more convenient to use that way, plus they release their moisture better when cooked and give what ever you're throwing them in a more shroomy flavor.

Depends on the quality of bun but i would say its about 20%.
There are some places where the bun is basically as good as two slices of bread. Prefer a slightly toasted bun with grains to add texture, but im not opposed to the idea of lettuce buns as long as the burger itself was well seasoned.
