Just start by substituting certain meats with vegetables sometimes. You don't really need to "ease" into it. Maybe have a good portfolio of vegetarian recipes before you dive in.

I grew up with this shit made with ground turkey with lettuce, cheese and tabasco sauce. The taste just reminds me of home and my mom's lazy cooking.

I have a rub that I use on pork shoulder, but it work well enough with beef. I sear the hell out of that on the stove top, then put it in the oven for about 8 hours at 200. Serve on corn or fresh made flour tortillas, with cabbage, guac, jalepenos, cheese of choice and pico.

But there are also days when I will do what >>8242403 says because it reminds me of happier, simpler times too.

Fruit salads, be generous with the berries for maximum antioxidants.
Probiotic foods too like kambutcha or keffir. Just google recipes for those I guess.
Nuts, seed, legumes, anything high fibre with low GI that isn't bread since you mentioned she cant have that. i.e. almonds, sunflower seeds, chia seeds, flax seed, flax seed oil, oats, etc.
