How to get into the culinary industry? I'm working in finance right now and hate it. Should I go back to school for a culinary arts certification? Or just work my way up from dishwasher or something. I'm in North Carolina right now, if anyone knows of anything in the region that might be helpful. I only have $5000 to throw towards schooling.

Italian food is probably more popular, while French food is more prestigious. This is certainly true in America, at least. Whether this is because of the cuisines themselves or historical enmities and immigration patterns, I'm not sure.

Serious question here: why are germanics so fond of boiling things? It's simple and easy, and sometimes you have to do it, but I can't see any good reason to use boiling instead of another cooking method if you have the option. Its only advantage is its ability to make things soft, which might be necessary sometimes but will always come at the cost of flavor and nutrient retention. And of course boiling produces no additional flavor in food, where many other methods do (e.g. frying, roasting).
I'm not talking about braising or simmering things in flavorful liquids here, or boiling grains and pasta, but rather meats and vegetables.
