Why are poor people so fascinated with steak?
Because they rarely get to eat it, and the high quality steaks even more rarely? Just guessing, since I'm quite poor myself but steak isn't exactly my cup of tea. Especially if we consider that steak is meat and tea is a liquid.
On that note, I wonder if drinking tea after having steak is common, though. You know, I don't get to eat steak that often since I'm quite poor, and though I don't particularly care for it, I got curious about these questions sometimes, even if for purely intellectual reasons.

Looks like a seared braise with broth.
It is 100% of the time some breed that is meant to look nice and be resistant to the environment but it always tastes like water and little else.
I can only say this as a Sicilian who was raised on plentiful varieties of non commercial fruit breeds.
It's so sad that most people will never get the chance to taste good fruit. Even here in Sicily the fruit at the shops is the same commercial crap that you find everywhere else.
I wonder if my father's seed bank has some monetary value. He has been at it for half a century along with his brothers. There's over 40 varieties of fruits. Anything that would grow in our climate has some designated corner on our land.

the varieties you plant yourself can be more aromatic too but have worse shelf life so they are not planted for super markets.

I've gotten on a Cannoli Cream kick lately. After experimentation I prefer mine when I fold whipped cream into the drained ricotta, lightens up the texture. Thing is the whipped cream separates over night and kinda turns the finished product gross. I do plan to use it on a layer cake as filling/frosting. What I'm thinking about doing is using gelatin to stabilize the whipped cream before folding it in, is that the right way to keep the Cannoli Cream together?
Agar works better than gelatin for stabilizing whipped cream.
