Hey, /ck/ looking for advice on making good Tiramisu. Anyone have any success with it? What coffee did you use and what are good ladyfingers? Should I bake my own ladyfingers or have to find special Italian ones?
I'm probably going to go for a very mild coffee flavor and more cocoa powder.

Just use whatever coffee, it doesn't really matter. And storebought lady fingers are fine.
I don't even know how you would make your own ladyfingers, but when you buy them from the store, they have to be hard and cracker-y. If they're soft and spongey they won't absorb the liquid as well.
Don't use a lot of coffee. If you leave the ladyfingers in them for too long then not only will the liquid pool at the bottom of your pan when it's done, it'll also lend the entire cake a weird taste that doesn't compliment it at all. The coffee should be a nice hint to compliment the cocoa, not a dominant flavor.
THANK YOU ANON for whoever posted this blurb about how to make hash browns. I always turned out glue. Tonight? PERFECT HASH BROWNS!!!!!!
Cast iron pan on medium heat, throw on 2 sausage links or 2 pieces of bacon.
While the pan is heating up shred some potatoes and squeeze out the liquid by hand over the sink. Throw in a knob of butter into the pan and place the shredded potatoes into the pan and form a patty shape.
By now the pan should be decently warm, cook the potatoes for 6 minutes then flip them over and cook for an additional 4. Salt both sides. Perfect restaurant quality hash browns every time.
Place hash browns on plate and quickly fry up 2 eggs over easy and breakfast is done. :buffet:

secret to any perfect fried potato is freezing.
I always have to put what seems like way too much salt for my hash browns to taste good.
I don't think I'm salt insensitive.

Yup. The key is the decrease the water content as much as possible.
Good advice for gnocchi as well.

You can tell how ripe an avocado is by gently pressing into the skin. If the avocado is firm and does not budge, you will need to let it ripen for a few days before consuming. Soft avocados make great guacamole or dip, while firmer avocados are great for slicing and adding to a salad or a sandwich. To speed up the ripening process, place an avocado in a paper bag with abanana.
How to cut, slice, peel and pit avocados

Avocado can be mashed and spread on toast instead of butter or sliced and added to a sandwich or salad.
Quick tips:
Spread avocado on toast in the morning instead of butterUse avocado instead of mayonnaise in chicken or egg salad, or as a spread on a sandwichThe soft, creamy texture of an avocado and its mild taste make it a perfect first food for babies.
Try these healthy and delicious recipes using avocado:
Coconut kale smoothie
Roasted Brussels sprouts with toasted pecans and avocado
Poblano chilaquiles
Chipotle mango guacamole.
Everybody here knows this. Who the fuck do you think you're dictating to?

Also, I'm trying to get more into sandwiches, I like salami but my dad is sooo into baloney,I have a hard time getting into it, any fans of it here? I would love to hear your thoughts on the controversial meat
Best way to get into baloney is to order it very thinly sliced at the deli.
>thin sliced balone and turkey
>hoagie roll
>mix together mayo and yellow mustard, adding a pinch of cayenne, spread on both sides
>serve with muenster and pickles
Get mortadella from the deli--much better than bologna. It and packaged bologna are analogous to real cheese and processed prepackaged "cheese" slices. Pair it with some Genoa salami, and maybe muenster or gouda, and you're on the express train to Flavortown (TM).

Baloney isl iterally shit meat. Tell your dad to kill himself or tell him to eat baloney not on white. We'll see a conversion to ham soon.
So I given about a case and a half of these from my Mom because she found them on sale, ideas on what to do with them besides just eaten out of the container?
The flavor is good, but it's so salty, I was thinking a Shepherd's Pie...
>>9050678
WTF is that? Some kind of pre-made mashed potatoes?
>>9050686
Yeah its like instant microwaved "loaded" style mashed potatos
>>9050697
Personally I think the "loaded" nature would make it too much for Shepherd's pie.
I'd just eat it as a side, or perhaps you could make croquettes out of it? Though that may not be possible depending on what sorts of shit they may have put in there. It's worth a try though. Just form it in to balls or whatever other shape you want, egg wash, panko, deep fry until crisp.
in the entire realm of culinary experiences, is this the most bittersweet of them all?
