because it's fucking simple to cook, almost all dishes include the same basic ingredients or are perfect to prepare in the morning as they need to simmer for x hours or rest for x h.
Italian kitchen is the only kitchen style where you can have a 120 dishes card in a 80 places restaurant and still cook it fresh as single cook without sweating or having people wait for their food.

Italian food is probably more popular, while French food is more prestigious. This is certainly true in America, at least. Whether this is because of the cuisines themselves or historical enmities and immigration patterns, I'm not sure.

French cuisine is a meme. Pretty much everything either originates in another Western European country or has a direct equivalent dish in each country. If you try to make something fancy, you might as well call it French and raise the price.
