Don't have any experience with bullpups, but it should be fine. The SA80 series is a little on the heavy side, which helps with the already low recoil of the 5.56mm round. Take your time, be safe, listen to whoever you're shooting with and don't stress about it.

It's easy, just pretty methodical. Do your research and you'll be fine. I like the 1861 for dem curves but in all reality an 1858 replica is a much better/easier option as the cylinder is ridiculously easier to remove and clean. Doesn't look as pretty though IMHO.
Either way, BP is fun as hell and rewarding when you have everything loaded up and hear/feel the low thundering boom and cloud of smoke. Just make sure you always clean it after shooting.

Real body armor? Magnum handguns and pretty much any rifle rounds with more power than a .22 lr. Shotguns are not as effect at penetrating armor. Maybe if you had sabot slugs or something. But that will do you for level IIIA, which is what most cops have.
Level III is rated to 7.62x39 AP, so anything bigger that is AP should punch right through.
Level IV supposedly can take .30-06 AP but I don't believe it is issued to anyone.
But if you're opponent is armored well enough that you need a .30 cal or larger rifle to get through the plates, you should just try for head and leg shots. Helmets don't protect for shit from bullets and legs/arms are generally unprotected.
