I'm looking to make a roast I can carve for a holiday dinner, a little worried prime rib is too costly.
I love making tri tip into a roast. Best meat on the cow IMO and last time I bought it it was reasonably priced.

I recommend strip roast. It's the best combination of tasty/beefy and juicy/tender, IMO.
It's a slightly harder-working muscle compared to tenderloin/prime rib roast, so it's got a beefier taste in comparison (though not as beefy and tasty as whatever you call the thigh muscle in English) but it's also tender enough that you can cook it to medium or even rare and have it still be soft, moist and delicious.
The usual price floats around $6.99/lb, but you can find it on sale for $4.99 or occasionally even less.
Are there any foods that LOOK appetizing to you, but you almost always end up being disappointed with when you actually get them?
For me it's Tommy's chili burgers. I live in Vegas, so I can't say I know if it's better at the original place or whatever, but man, a chili burger looks great on TV, but ends up being sloppy and bland at the end of the day, and I always regret giving it another chance.

Right one is the older model but has manual controls for the temp and timer; while the left is newer, but can only manually set the temp and has everything else going through their phone app.
