How do you foodies feel about shoenice?
I've heard paper and thumb tacks pair really well with a chardonnay.

The man can seriously drink vodka. I'm fairly certain that he doesn't puke it all up either. I worry about his liver.

If you could get all your daily nutrition from donuts in pill form would you make the switch?
15 posts and 3 images submitted.
>>
>>9361886
No all those nutrients react with one another when they hit stomach acid so there's no way to digest 100% of a multivitamin
>>
>>9361913
But that was not the question. It's hypothetical.

If there was a pill I could take that would give me all I need and surpress hunger, I would. I would still cook occasionally because I can enjoy it when I have the free time, but especially during weekdays it's more a chore.
>>
>>9362005
but you can't get all of the stuff in a vitamin

So I've got some chicken thighs that have been sitting in my freezer for a month.

I'd like something savory and crispy. Should I sear the thighs first and then finish them in the oven, or the other way around? I've heard of people doing either with steak for a nice outer crust and tender interior.

I was initially thinking about braising them, but I've got a lot and was thinking more of making them all at once so I could eat with anything.

whack them to even thickness underneath a sheet of plastic
put in a cold pan, skin side down, start on medium heat
5-6 min per side
done
they'll be extrwa cwispy

be sure to pat extremely dry and salt the skin well before cooking
>>
>>9361846
forgot to mention, debone them before whacking them down
save bones for stock or whatever
or throw them in a pot of rice before cooking along with spices for some chikin' rice
>>
However you cook them, make sure they're completely dry before you do. It helps the skin crisp.
You can coat them very heavily with salt and let them rest uncovered in the fridge for a couple hours, then rinse them and pat them dry again then season. This will bring a lot of moisture out.

You don't need to meet all your nutritional needs if it's only a week. Buy ten loaves of bread.

My housemates don't want to deal with the smell and cleanliness of cooking so I'm stuck with a kettle and microwave. Can I treat homemade egg noodles like instant noodles or do they require more cooking time?
8 posts and 1 images submitted.
>>
>>9361656
5 maybe 6 minutes in a rolling boil. Instant is like what, 2-3 minutes tops...so yeah a longer cooking time but not by much.
>>
>My housemates don't want to deal with the smell and cleanliness of cooking

wtf? How do egg noodles or most things for that matter have objectionable smells when cooking? If you clean after you finish eating how is cleanliness an issue? How beta do you have to be to allow your housemates to put the kitchen off limits for cooking?
>>
Are you saying you literally don't have a stove? Because if so then you should starve yourself for being that retarded. If you have one and your roommates just don't like you using it, tell them to eat shit and then serve them some you fucking beta autist.

I recently read an article that had suggested miso paste as a great alternative for salt in most dishes. I beat some eggs with the miso then scrambled them and served them over some steamed vegetables, and it turned out really well. Anyone have any good (non-soup) miso suggestions?

The last time we made burgers we mixed miso paste with the mayo, turned out really good. Mixed some mushrooms in with the burger meat and pickled some bok choy, it was all really nice.

I use it in salad dressing and for salting meat

Herb or garlic butter if you're feelin' fancy

I'm so autistic that I always ruin steamed veg.
How do?

What is the best type of pie dough for meat pies? The premade pie crusts I get from the supermarket are way too buttery and the resulting meat pie hits the "greasy" note way too hard. Is there a easy pie crust that doesn't use tons of fat?

Anyone here know about or done a stage at a restaurant? I've heard it's a good alternative to culinary school, which is expensive and doesn't guarantee anything. Would doing the equivalent of an unpaid apprenticeship at a good restaurant be worthwhile for a culinary career?

A stage is basically a 2-4 hour working interview. Basically the chef wants to see if you're a retard or not. If you have no experience, you will look like a retard. If you're asking if you should work for free for an extended period of time, you can fuck right off. We don't get paid enough as it is even though it takes years to develop all these skills. Don't need some faggot undercutting us working for free because MUH PASSION. Learn by working at chain restaurants or maybe a local sports bar that just does burgers or something. Stay for a year and learn everything. Now move to a nicer place. Stay for a year and learn everything. Eventually, 5 years down the line you can do a stage at the nicest restaurant in town and at least not look like a retard. Get paid to learn, it's the only respectable way.
>>
>>9361395
lmao fair enough. But you'd agree culinary school is also a bad call?

I'm mostly concerned with the possibility of never really moving up in the culinary world.
>>
>>9361330

I've said it before many times on this board, culinary school is by no means a scam. BUT, it all depends on that you want to do in your culinary career. If you want to just work on the line and have no aspirations to be a head chef, then yeah just getting a job at a restaurant is gonna be fine. But if you want to do something more with your career? If you want to become a high paying pastry chef or a head/sous chef? Then yeah culinary school is gonna be your thing.

This isn't to say that everyone in a high-paying culinary job went to school for it. Experience goes a long way in this job. But a lot more doors open for you with that education under your belt.

I'm gonna give you a quick story that happened to a friend of mine. I live in New Orleans, and one of my friends has been working at a rather nice restaurant for years, training under the pastry chef there. Now at this particular restaurant the pastry chef makes right around 60k, so when the pastry chef announced he was leaving my friend was excited because he thought he had the job in the bag. Turns out that he lost the job to a girl years younger than him because while she had less experience she HAD gotten a culinary education and simply knew things he didn't.

So look I'm not gonna tell you that culinary school is by any means necessary, after all plenty of millionaires never had college educations. But if you want to go far it may be something you want to do.
