>no pizza hat
Man he had one job
Everybody has their own method as you can see by this thread.
I like mine "American diner" style so this is how I do them:
>pan: nice and medium low, just hot enough that a droplet of water skitters across the pan but doesn't boil off instantly
>eggs like any other protein should be brought to room temp before they're introduced to the pan
>crack them into a bowl and whisk the shit out of them
>butter in the pan, more than you think you'll need
>eggs into the pan
>let them set for a few seconds
>drag your spatula through the pan until you form something that looks like picrelated
>tilt the pan so that the liquid eggs fill up the space you just made
>repeat until they're almost done
>get them out of the pan earlier than you think you need to because the residual heat continues to cook the eggs
>done in the pan = overdone on the plate
wa la
butter is pretty fucking important, dont skimp
i used to not use any seasons or any cooking oils. yeah as you can expect my pans looked like shit.
once i started, i couldnt go back.
1) enjoy the taste of eggs
2) season your eggs
3) cook your eggs

Take them off before you think they're done.
start with a cold pan and eggs already whisked together, turn on the heat and stir constantly until u think its going to be down in 2 minutes and take it off the heat
