I want to start sharpening my own knives, both because they need sharpening and for "hobby".
I'm not on a particularly good budget, but not entirely poor either.
Tips?
Get 15 japanese whetstones with different grits and post about your superior sharpening on 4chan. Your knives will be extremely sharp.
I'm pretty new here but why can't you just sharpen one knife with another one's dull edge? That's how I do it anyways.

you basically try to realign the edge, what most people have a honinh steel for, that doesnt make your knife any sharper though, just realignes the blade to a, hopefully, more central position.

I got a gift card to Longhorn as a gift. Normally I like to cook my own steak because I know how I like it so I never go to steak houses, especially the franchise ones.
Anyway, whats the best steak to get off of their menu? Their cut choices are sirloin, ribeye, fillet mignon, t-bone, NY strip, porterhouse, and prime rib.
When I cook steak for myself I like it nice and rare because I'm a sane, well adjusted human being. Not blue rare, but close to it honestly. The cuts I usually cook for myself are tomhawk/cowboy cuts, ribeyes, or NY strips. I bought a cowboy steak once on a whim and cooked it really low and slow and it was one of the best steaks I ever had - hard to cook correctly though.
What should I order? I heard flat iron steaks are good, or is that a meme?
flat irons are flavorful and the second most tender cut on the cow. How can you not like them?
Prime rib medium rare with horse radish and a side of sautéed mushrooms. Any steakhouse will carry it and it's delicious.

i always buy the ugly gray meat in the "quick sale" section. it's just as good.
supermarkets use tricks to give meat that bright red myoglobin color: gasses, nitrates, etc.

the base itself would be fine. i would imagine it would be somewhat difficult to make the egg behave uniformly through the canning process. but they could always sell it and just have you whisk the egg through at home, that fits in well with the whole cake mix/packet jello 'diy' marketing strategy that is so successful with other ubiquitous products.
