What do you think of having to keep track of food, water and sleep in otherwise non-survival games? Is it always cumbersome bookkeeping, or are there ways of approaching them without making them an obstructive mess?
I personally think it's a good thing to have around, specially because it makes less used skills and activities (herbalism, cooking, survival, hunting, gathering) show up more often for both a narrative and mechanical benefit, as well as making scarcity of resources meaningful, but this is coming only from my personal experience with my group.

I'd very much agree! I think it depends on the group, and I think it's possible to implement without tiresome bookkeeping but very often it can just be tiresome bookkeeping.
I think one of the ways to look at it (as a DM) is: what do you want from the game by including this? Are you looking for that moment when the PCs make desperate decisions low on supplies? Do you want it as a general more 'realistic' element to get the PCs involved? Or do you want it to boost supplemental skills narratively and mechanically, like you've pointed out?
Once you know what you want from it, I think you can decide whether or not it's gonna benefit your individual game.

With regards to running, depends on the system. Some systems make running from combat functionally impossible, so make damn sure that they CAN get away at all. Then, instead of "lel u run or i kell u" retardation, give them a really hard encounter that'd be much easier if they disengaged and did X before coming back.

As for some fights, I outnumber them fucking 5 to 1 and they manage to either not die or break the enemy. We had someone introduce PF to us and TPKd everyone at the end while laughing so I'm trying to stay away from a TPK.
Speak to them about the issue. If they keep metagaming you either use it against them or leave the group.
Remind them that escaping is an option. If they can flee but die because they decided to keep fighting, it's their fault.
There is a high chance that they will blame you for dying. And even when you explain to them the situation they might complain about not having enough information, the encounter be unbalanced, and so on.
I personally think it is OK to "teach them a lesson" but don't overdo it.
Give them hints about the danger, make npc's warn them about it, let their enemies give them a chance to flee before any conflict starts, if they still charge head on, and never run or surrender, they deserve it.

Then I have a bad news for you.
It's been a while now, I was thinking to use a demon-like creature, but I need help.
The idea is that the creature is more powerful than the players and they can't kill it.
It is always in their field of view and can't be escaped; but the demon can't kill them, can only make them uncoscious.
Pratically whenever the players metion (I'd love to write "think" but probably it would be too difficult) him, he would appear out of nothing to "kill them", but in the moment they "ignore\forget" him, he disappears.
And here's the problem: How would you make this concept clear to players without telling them directly and not making the situation frustrating?

You could have them do sanity rolls. First time when they see him those who fail get a higher chance to "think" of him whn they roll next time. If they fail just sumon him. Ask them if they are okay with you being able to call him once every session and you should be good to go.

Most fantasy settings is very much only medieval/feudal in aesthetics and not in how it actually functions.
