Why bell curve dice probabilities?
If you want to make modifiers matter more, use a flat probability and use larger modifiers.
Bell curves make judging the value of a modifier more difficult, which makes designing game elements that grant modifiers more difficult, and which also makes assigning conditional modifiers mid-game a much more ambiguous and fiddly process.
Has anyone considered a 1d12+modifiers system in place of 2d6+modifiers?

So Im running a 5E campaign and about to introduce a new group, The Sunfire Knights. An order of Paladins, Fighters and just about anyone who wants to take the fight to the undead and dark powers. I have most of the ranking done on the knights except for the 4 general type figures and their leader. I was thinking Archon but that sounds way to angelic to me. I just need a title/rank befiting the theme that is the Sunfire Knights.
The Knights believe that all arcane magic is inherently evil, with warlocks, necromancers and cultists being the worse. They go around cataloging mages in their lands and they regularly cremate their dead and exhume the dead in conquered lands, and cremate them to prevent necromantic tampering.

Candle's Thrush: A title for the newly initiated. One who has sworn their vows, and begun the training required to become a Sunfire Knight.
Morning's Robin: A title for knights who have completed their training, and are now fully initiated into the order. These are knights whom have yet to actually defend their vows -- they have the skills necessary to do so, but have not been sent to quell any threat.
Noon's Falcon: A senior knight, whom has always been sent on at least one deployment to obtain this rank. Often times, knights choose to retire/exit the order at this rank.
Sun's Eagle: Similar to staff ncos of American military, those who choose to obtain this rank are placed in high-leadership positions. Oftentimes, an Eagle controls a group of at least Robins, and many are assigned to train Thrushes into Robins.
I hope some of this jives with you OP. I thought using birds as symbols would be cool. The head knight or whatever could be called the Phoenix or something as well, I suppose.
Phoenix is a perfect fit.

I'd like to try a class paradigm in D&D where clerics represent more the robed miracle worker, less holy warrior, at least cosmetically. For 5e, considering simply creating a variant that does away with armour proficencies, and instead, adds Wis modifier as a divine magic armour (call it Holy Protection or something like that) to AC, in the same a monk does.
Domains that grant armour proficencies, instead grant an additional armour bonus. Thoughts?
Boring, because at the end of the day it doesn't really change anything besides saying "but I'm not ACTUALLY wearing armor!" I can already describe away the armor as being divine protection, there doesn't need to be an additional rule about it. It's not an interesting decision to make, mechanically. Give them an actually interesting offset for being armorless.

Not by RAW. Armor matters a lot. It has weight, Strength prerequisites, proficiencies, can't sleep in it, gets affected by metal-affecting spells, etc.

Its not meant to entertain (though maybe it should). The decision is mainly because I'd just like to just run a setting for once where priestly healers aren't armoured. Perhaps they can discharge the magic bonus for additional spell(s), and don't get it back until a short rest has been completed, something like that.

For me, it was in my very first game. DM had us chasing this bullshit wizard whos special gimmick was creating portals. He could create a few portals at will, but most of the time where the portal ended up was decided by a D20.
We eventually corner the wizard in a castle. Rogue wants to hit him with a special poisoned arrow so even if he gets away, he'll still be messed up.
Holy Paladin decides rushing in blindly and fighting him 1 on 1 would be smarter.
Wizard ends up in the dungeon, and hides in a cell. Paladin bursts in and enters the same cell.
Wizard opens a portal, and GM rolls the D20. Ends up that the portal opened to the Elemental Plane of Water, and infinite ocean begins flooding the castle, starting from the dungeon.
The wizard portals away, and myself and the other players escape, but the Paladin in his full plate armor drowns. Inside a castle. Miles away from any major source of water.
Best part was, the rogue ended up killing the wizard with the same poisoned arrow he offered to use earlier.

I once played a game of Magical Burst where a player tried to protect themselves from a boss monster by putting up a barrier around their space.
Said boss-monster was one of those types who was literally merged with the environment and flooded the barrier with acid while the player were trapped inside.
I wasn't even being a jackass GM, I made it clear the other players could have helped her break the barrier in time if they wanted... but apparently abandoning their friend to avoid taking a few extra hits themselves was the better option.
A robot character player bought a ton of remote detonation C4 and had planned to use it.
Without letting him know, we filled his backpack up with the stuff and he went to negotiate with some nasty people. Unfortunately the BBEG showed their face and with lackeys at the meeting, and surrounded our guy and were basically going to just curb stomp and kill him. Right before that though the BBEG gloated and asked him if he had anything to say about the situation.
Our guy said something along the lines of "Man, I wish I'd gotten a self-destruct mechanism."
It was a bit OOC but the rest of us looked at one another and without another moment's hesitation triggered the detonator and brought the building down killing everyone there. The DM was pissed as hell but all of us, even the blown up guy who hadn't known anything of what we'd done, were laughing for like 5 minutes straight.
Either that, or the character that hit a tunnel roof while fighting on top of a train.
