I don't think you understand how most creative writing profs and artists-in-residence in faculties get hired. They have to be published, recently so (fiction or poetry), and are expected to bring their own work to the table and make students aware of it. This isn't just an ego trip, it's what you're paying for.

You can't actually read ulysses. Gravity's rainbow is challenging as fuck, but I imagine doable if you really take your time. I haven't read the brother's kamazarovamozombabally but I imagine the great gatsby is pretty easy, considering it's high school lit. So I would go gatsby. Or just try the others and get frustrated and realize I was right and then go to gatsby, either way you'll end up down the same path.

What us the nicest published copy of Ulysses that contains the utmost of these qaulities of importance I consider in descending order.
1. Good Qaulity
What I mean by this is the actual qaulity of the material e.g. Does the cover feel sturdy? Are the pages made of good paper? Does the text itself contain little abberations in its printing?
2. Readability
How easy is it to actually read the words on the page. Modern Library seems to be the best in this regard, but the less space between the words the more often I will miss sentences and reread others. Margins, Size, Font is also a factor but is less important.
3.Size
Most literally, can it be easily held in hand, or is it an encumberance, and hurts to hold for long periods of time.
4. Superfulous features
Everyman's Library has an attached bookmark, Harvard Classics has leather covers and gilded pages, etc. These aren't really important but it never hurts to have a copy with a couple unique extras.
Unless the introduction was written by the author (like in some copies of Ray Bradbury's "The Illustrated Man") than I don't really care about it. Thanks.

Dubliners isn't why Joyce is considered challenging. Work your way through Dubliners and onto Portrait of the Artist as a Young Man, then through Ulysses. Then, if you dare, Finnegan's Wake.
