You need to cultivate the strongest yeast for your bread. To do this you must make love to the dough in various ways

you will let this cultivate for an hour
the next step is to slowly add flour until the sponge is a ball of soft dough
now you will put this in the fridge
only the strongest yeast will suffice for your bread so it may also eat his deceased comrades so they are more powerful. Let this sit in the fridge to defrost so you can unleash your monster to inflate over your counter

Use a simple sugar and salt brine. Use sea salt, you may need at least a cup for two whole chickens. If they are fresh birds leave them in it over night in the fridge. Store bought and thawed at least an hour in the brine. Seasoning, How are you cooking it? Salt and pepper could be all you need. Paprika is under rated and under used in the average kitchen, it is not just for looks. If doing the whole bird, make sure you cover the inner cavity as well.
