I want to try making a beef and broccoli stir fry today, ideally something to replace the chinese takeout I used to order. The problem is, I don't know what ingredients are vital for the sauce, and I want to start out with something simple and basic. I've never made anything like this before, so I don't know what ingredients are considered required, and which are optional/can be substituted. Most of the recipes I've found online list a bunch of ingredients that vary from recipe to recipe and don't make it clear which are vital. I already have soy sauce, brown sugar, and mirin on hand. Can someone please suggest a very simple baseline recipe for this? If I have to go out and grab additional ingredients, I'd prefer to get as few as necessary.

What kind of oats are you using (rolled, steel-cut, etc?
I would advise not cooking the oats ahead as they will soak up too much liquid and sog out your batter and make really runny-flat cookies.
You do need some kind of leavener. Do you not have baking soda or baking powder? You could always separate the yolks and beat them into the batter and make a meringue with the whites and fold it in like a genoise cake.

Hey so i've recently turned pescatarian with a focus on eating mostly vegetables due to health reasons. Im fairly good at freestyling different dishes to a certain degree (knowing some recipe and just experimenting most of my way through it, alternating most of it) and ive had a lot of luck cooking indian cuisine-esque chickpeas in different types of sauces, pasta's, and chili con carne made without meat. Im slightly bored of the spicy tastes though, they were fine when i still ate meat but now it gets a bit monotonous. Could you guys help me find new recipes that would also let me use more veggies of different types? milk products welcome but i avoid eggs due to them being currently poisoned in europe.
I'm going to make split pea soup tomorrow - the staple dish of the German Wehrmacht.
500g frozen peas
3-4 diced potatoes
2-3 diced carrots
2 diced onions
diced bacon, ham or smoked mackerel to taste
stock
leeks, celeriac, garlic to taste
salt, pepper
Simmer half or a third of the frozen peas with all the other stuff in enough of the stock that it is barely covered. Simmer the rest of the peas in another pot, finely puree them with an immersion blender when done. Add to the other ingredients, let simmer for half an hour.
If you put everything in one pot and then purree it partially it will look like puke.

Does fermentation create pressure inside a can of kimchi i.e. will the kimchi juice spray all over my kitchen if open it carelessly?
The heat needed for canning killed any bacteria that would have continued fermenting. Protip: Canned kimchi is garbage and you get no probiotic benefit.
