I've got a few mathematical questions for you electrical geniuses out there. It's ass cold where I am right now and I have had issues starting my truck after a few days of not having it on the charger due to the alternator not fully charging the battery through the short trips I take to work. (I idle the truck at lunch for 25 mins almost daily as well) so I've decided to add a second batter that I have in parallel with a cutoff switch in the cab that I can throw when I want to start it.
here's the actual question
If the battery under the hood has 10.8 volts (low), and the battery in the cab has 12.5 volts, how much voltage or output difference will I be making?

I don't quite get your question but I'm trying to help anyways.
Voltage is not the big issue here (apart from the fact that you would charge the "low" battery with the full one if you were to leave them connected.
The thing is, cold battery don't like to work, as soon as you try to pull some current the voltage drops. (U=R*I) tn leaves you with a lower current which makes your starter whewwww.w..w. w.. noises.
If you put in a second battery, it will support the other battery, voltage does not drop as much and then starter is happy.
--> only connect the second battery for starting and you should be fine, just make sure to immediately disconnect it after your car start running and recharge it frequently (car batteries don't like deep discharges)
btw. if your car battery has 10.8V without load it may die pretty soon, try to get ï fully charged once in a while.

Look at how trucks with dual batteries are wired up, then do similar with your own. My old 3/4ton heavy duty Chevy (1986) had dual batteries from the factory under the hood.

The weak battery doesn't matter if you are cranking the starter. All batteries have a natural internal resistance. When you are cranking the starter, it draws so much current that it appears to have a very low effective resistance. The weak battery's resistance in comparison will seem very high and thus not really reduce the available power of your good battery to the starter.
Just disconnect the good battery when not charging and keep it topped off with the charger.
Since your weak battery is at 10.8 volts, it might be sulfated due to being deep discharged. Don't let batteries get to the deep discharged state. Sulfation means its plates change due to the sulfur deposits reducing that battery's ability to provide CCA and to hold a charge.
