Are there any good books to really learn how linux works? Preferably e-books.
I don't mean just how to use the command line. I'd like to learn the ins and outs of how everything works on a basic level so i can have a better idea of what I'm doing rather than blindly copying and pasting commands in a terminal.

Elementary is basically Ubuntu with another desktop environment, which is better than Unity IMHO.
It's subjective, try some distro in a VM or in the live environment and choose the one you like better.

I have a very similar workstation - HP XW-6400. Very similar configuration. You're lucky it's got the max RAM in it already because it was a bitch to get that part right.

both are good choices right now I'm on Antergos with xfce which works perfectly fine. Switched to it after a bad distro-upgrade with Xubuntu. It's as easy to install and the AUR has everything you could need to install in your memepad.
